Chicken Enchiladas by Louise and David Horvath

There is nothing more special than a family meal together, sharing happenings and ideas, making plans, and showing love for one another around the table. It’s easy to understand, then, why Jesus chose such gatherings to comfort, teach and reassure his followers. At the Last Supper, surrounded by those he loved, and at the joyful wedding feast at Cana, and in simple dinners with friends and outcasts, Jesus modeled community and support for one another while breaking bread.
No wonder we find such delight in our own gatherings for meals, to the point that in our family, we use many reasons to celebrate together. On May 5, we chose Cinco de Mayo as a chance to recognize and celebrate Mexican and Hispanic traditions and contributions to our country. It was fun to enjoy our “first ever” homemade enchiladas. The fiesta we had was not unlike the feast in Cana and these many other meals with Jesus, where we danced, enjoyed each other, and celebrated others. We had so much fun, it was a success!
Starting and ending with a prayer of thanksgiving for the blessings of family and joy-filled moments, the effort was well worth it. Jesus teaches us to “abide in Him” and to “abide in love”, so what better way to respond than celebrating with food and those dearest to us!
